Ingredients

  • 2 lg. heads Bibb lettuce, torn
  • 1 lg. head red leaf lettuce, torn
  • 1 c. finely minced green onion
  • 1 can mandarin oranges, liquid removed
  • 2 chicken breasts, cooked and cubed (optional)
  • 1/2 c. almonds, sliced
  • 1 1/2 tbsp. sugar

Directions

  1. Spray Teflon pan with Pam. Add in almonds and 1 1/2 Tbsp. sugar to pan on low heat and keep stirring till almonds are toasted and coated with sugar.
