  • 1 (7 ounce.) pkg. elbow macaroni (cook till tender)
  • 2 c. sm. curd cottage cheese
  • 1 c. lowfat sour cream
  • 1 egg (slightly beaten)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 8 ounce. American sharp cheese (shredded) (I use Kraft Old English sharp slices)

Directions

  1. Cook macaroni according to directions. Drain well, combine cottage cheese, lowfat sour cream, egg, salt, pepper. Add in 1 c. of the shredded cheese (save rest for topping). Mix these ingredients all well. Add in cooked macaroni, turn into a well greased casserole dish, sprinkle with remaining cheese and sprinkle with paprika. Bake in a moderate oven (360 degrees) for 45 min. Serves 6-8.
