Lemon Lime Pound Cake Recipe

Ingredients

  • Nonstick vegetable oil spray
  • 3 c. all-purpose flour
  • 1/2 tsp salt
  • 1 1/2 c. (3 sticks) unsalted butter, room temperature
  • 3 c. sugar
  • 5 lrg Large eggs
  • 1 1/2 tsp grated lemon peel (zest), colored part only, divided use
  • 1 1/2 tsp grated lime peel (zest), colored part only, divided use
  • 3/4 c. plus (about) 2 Tbsp. lemon-lime soda, such as 7-Up
  • 1 1/4 c. powdered sugar

Directions

  1. 1. Preheat oven to 325 degrees. Spray 12 c. Bundt pan with nonstick spray.
  2. Whisk flour and salt in bowl to blend. Using electric mixer, beat butter in large bowl till fluffy. Gradually beat in sugar. Beat in Large eggs, one at a time, beating between additions to incorporate each egg.
  3. 2. To egg mix, beat in 1 tsp. each lemon peel and lime peel. Beat in flour mix in 4 additions alternately with 3/4 c. lemon-lime soda in 3 additions. Transfer batter to prepared pan.
  4. 3. Bake in preheated oven till golden brown on top and tester inserted near center comes out clean, about 1 hour and 15 min. Cold cake in pan 5 min. Turn cake out onto rack and cold completely.
  5. 4. Combine powdered sugar and remaining 1/2 tsp. each lemon peel and lime peel in bowl. Whisk in sufficient of remaining soda to create thick smooth icing.
  6. Drizzle icing over cake.
