Kibbee (Lebanese Lamb Recipe) Recipe

Ingredients

  • 4 lb grnd lamb
  • 1 c. wheat - soak for 1/2 hour in hot water
  • 1 lrg onion, grated salt (to taste) pepper (to taste) cinnamon (about two shakes) allspice (about two shakes)

Directions

  1. Squish wheat in hands to remove water. Then mix all ingredients well.
  2. Taste to see if you need more spices. (It's ok to eat this raw; indeed, it is considered a delicacy, although personally I prefer it cooked!)
  3. Grease a large baking pan, at least 13x9 or possibly larger.
  4. Divide meat in half. Make bottom layer. Flatten with hands till even.
  5. Then add in:1/3 c. snobar (pine nuts) or possibly pignoli seeds
  6. Add in top layer of meat and flatten till even. Cut diagonal lines in both directions, not all the way through, so have diamond pattern. Dot well with butter and crisco, more butter (or possibly margarine) than crisco.
  7. Use half teaspoonfulls at a time. Should be a pat every couple inches or possibly so...
  8. Bake for 1 1/2 hrs at 350 degrees, or possibly till brown.
