Ingredients

  • 80 gm Onion, minced
  • 30 ml Kaffir lime juice
  • 1 x Kaffir lime leaf, shredded
  • 150 ml White wine
  • 2 x bay leaves
  • 100 ml water
  • 200 gm butter
  • 300 ml cream Salt and pepper to taste

Directions

  1. 1. Place onion, lime juice, lime leaf white wine, bay leaf and water in a pot, bring to the boil and simmer to reduce to one third.
  2. 2. Strain into another pot, add in cream and reduce by half. Remove from heat and fold in butter bit by bit.
  3. 3. Correct seasoning and use as required.
