Ingredients
- 1 lrg jicama, peeled and diced
- 2 x ripe avocadoes, peeled, pitted and diced
- 1/4 c. fresh cilantro, minced
- 1/4 c. red onion, diced
- 1 x jalapeno chile, finely diced Juice of 1 lime
- 2 Tbsp. extra virgin olive oil
Directions
- Combine all ingredients in a bowl and gently stir. Refrigeratetill ready to serve. Serve with tortilla chips. Jicama is a sweet, crunchy tropical fruit. If you can't find jicama, you may use diced water chestnuts instead.
- Chefs Notes:This recipe is fine as is. The avocado has some fat but it is supposed to be the good type of fat.
