  • roasted red peppers pickled red onions extra virgin olive oil feta cheese

Directions

  1. Spoon roasted peppers into four individual baking dishes. May put some pickled red onions on top of each pepper. (Can put a thin slice of extra virgin olive oil quick-fried aubergine slices on bottom!) Put a slice of feta on top and drizzle with herbed extra virgin olive oil. Bake at 350 f or possibly 180 c for 10-15 min until cheese is melted and peppers are bubbling.
