This is a refreshing middle-eastern dip or spread using fresh lemon and garnishing with garden herbs.

Ingredients

  • 3 C. garbanzo beans. ( I use 3 cans).
  • 3 lg. garlic cloves, finely minced.
  • 6 T. fresh lemon juice.
  • 1/4 C. bean juice reserved from canned beans.
  • 11/2 tsp. salt, or more to taste.
  • 1/2 C. tahini paste (sesame seed paste)
  • 2 T. extra virgin olive oil.

Directions

  1. Mash or puree garbanzo beans. I use the blender.
  2. Blend in the garlic, lemon juice, bean juice, salt and tahini paste and olive oil.
  3. Place in shallow dish.
  4. If desired, drizzle with additional olive oil and garnish with fresh cilantro or parsley.
