Ingredients

  • 4 1/4 lb Grnd beef
  • 1/3 c. Vegetable oil
  • 6 c. Onions, minced
  • 3 c. Green bell peppers, minced
  • 8 c. Tomatoes, canned, sliced
  • 10 1/2 c. Dark kidney beans, canned, liquid removed
  • 3 1/4 c. Water
  • 2 c. Chili seasoning mix
  • 3 Tbsp. Durkee redhot cayenne pepper sauce Salt and pepper, to taste Lowfat sour cream, as needed Cheddar cheese, shredded, as needed

Directions

  1. Brown beef; reserve. Heat oil; saute/fry vegetables (onions & green peppers).
  2. Stir in meat. Stir in tomatoes and all other ingredients. Cover. Simmer 20 to 25 min, stirring occasionally.
  3. Serving Ideas : Serve with dollop of lowfat sour cream.. Top with cheddar.
