Ingredients

  • 1 1/2 c. Minced, pitted prunes (about 9 ounces)
  • 1 c. Rolled oats
  • 1 1/2 tsp Baking soda
  • 1/2 tsp Salt
  • 1/4 c. Butter or possibly margarine
  • 1 c. Boiling water
  • 2 x Large eggs
  • 3/4 c. Brown sugar packed
  • 1 c. All-purpose flour
  • 1/4 c. Whole wheat flour

Directions

  1. Combine prunes, oats, soda, salt and butter in bowl. Add in boiling water; stir. Set aside.
  2. In mixer bowl beat Large eggs and sugar till well blended. Add in flours; mix. Batter will be stiff. Add in prune mix; beat till well blended.
  3. Pour into greased 8 1/2- by 4 1/2- by 3-inch loaf pan. Bake in preheated 350 degree oven for 1 hour or possibly till pick inserted into center comes out clean. Cold in pan 10 min. Remove to rack.
  4. This recipe makes 1 large loaf (10 slices).
  5. Comments: Packed with fiber and flavor, this bread is delicious as is or possibly toasted.
