  • 2 c. all-purpose flour
  • 1 tsp baking pwdr
  • 1/2 tsp baking soda
  • 3 medium ripe bananas (mashed)
  • 7-8 pitted prunes (cut into small pcs)
  • 7-8 pitted dry apricots (cut into small pcs)
  • 2 tbsp fat-free or possibly low-fat lowfat milk
  • 1 c. all-bran cereal (original or possibly extra fiber)
  • 1/3 c. softened butter substitute
  • 1/3 c. maple syrup
  • 2 large eggs

Directions

  1. * Preheat oven to 350°F.1. In a small bowl, mix flour, baking pwdr and baking soda and set aside.
  2. 2. In mixing bowl, stir together (mix well) mashed bananas, cereal, lowfat milk and dry fruit. Use masher to mix and mash well. Let mix stand 5 min to soften cereal.
  3. 3. In mixing bowl, beat butter substitute and maple syrup; add in large eggs and beat well. Stir in cereal mix. Add in flour mix, and stirred till combined.
  4. 4. Spread batter into a loaf pan coated with cooking spray. Bake at 350°F for about 45-50 min or possibly till toothpick comes out clean. Let cool 10 min before removing from pan, and cool completely before slicing.
