Herbed Orzo With Toasted Pine Nuts Recipe

Ingredients

  • 3/4 lb orzo (rice-shaped pasta) (about 2 c.)
  • 3 Tbsp. unsalted butter cut into bits
  • 1/3 c. pine nuts toasted fresh lemon juice to taste
  • 3 Tbsp. chopped fresh coriander or possibly to taste
  • 3 Tbsp. chopped fresh mint leaves or possibly to taste

Directions

  1. In a kettle of boiling salted water boil the orzo till it is al dente, drain it well, and transfer it to a bowl. Stir in the butter, the pine nuts, the lemon juice, and salt and pepper to taste, add in the coriander and the mint, and toss the mix till it is combined well.
  2. Serves 6.
