  • 1 1/2 c. warm chicken bouillon
  • 1/2 c. uncooked regular rice
  • 1/4 teaspoon Italian seasoning
  • 1/4 teaspoon garlic pwdr
  • 1 (10 ounce.) pkg. minced broccoli, thawed & liquid removed
  • 1 can (2.8 ounce.) French fried onions
  • 1 tbsp. grated Parmesan cheese
  • 1 pound unbreaded fish fillets (thawed)
  • Paprika
  • 1/2 c. shredded Cheddar cheese

Directions

  1. Preheat oven to 375 degrees. In an 8 x 12 inch baking dish, combine bouillon, uncooked rice and seasonings. Bake, covered, at 375 degrees for 10 min. Top with broccoli, 1/2 can onions and Parmesan cheese. Place fillets diagonally down the center of the dish. Sprinkle fish lightly with paprika.
  2. Bake covered at 375 degrees for 20-25 min or possibly till fish flakes. Stir rice. Top fish with Cheddar cheese and remaining fried onions. Bake uncovered for 3 min. Serves 3-4.
