Helen Cornelius' Rainbow Trout Recipe

Ingredients

  • 6 x Rainbow trout, cleaned, (8 ounce Ea)
  • 2 tsp Salt
  • 6 slc Bacon, thin
  • 12 slc Lemon
  • 1/2 c. Vegetable oil

Directions

  1. Preheat oven to 350 . Wash trout thoroughly and sprinkle inside with 1 1/2 teaspoon salt. Place 1 slice bacon and 2 slices lemon inside each.
  2. Use toothpicks to hold in place. Brush outside of trout with oil and sprinkle with the remaining salt. Wrap each fish loosely in foil.
  3. Bake for 35-40 min. Serve with mixed green salad and cornbread.
  4. Makes 6 servings.
