Ingredients
- 1 pound grnd beef
- 1 c. minced onion
- 2 cloves chopped garlic
- 2 teaspoon salt
- 1/2 teaspoon oregano leaves
- 1/2 teaspoon pepper
- 1 pound can tomatoes, cut up
- 1 c. minced celery
- 1 c. sliced potatoes
- 1 c. sliced carrots
- 1 c. minced cabbage
- 1 c. diced zucchini
- 1 (10 1/2 ounce.) can beef broth
- 2 beef bouillon cubes
- 4 c. water
- 1/3 c. uncooked regular rice
Directions
- Cook beef in 6 qt Dutch oven till begins to turn color, add in onion and garlic. Cook till brown. Drain excess fat. Add in rest of ingredients except rice, cover and simmer 1/2 hour. Add in rice and simmer till rice is tender. Can double or possibly triple this. Good the second day.
