Grilled Buffalo Rib Eyes With Canadian Campfire Beans

Ingredients

  • 4 x buffalo rib-eye steaks - (10 ounce ea)
  • 1/2 c. Canadian whiskey
  • 1/4 c. maple syrup
  • 1/4 c. roughly-minced shallots
  • 1/4 c. canola oil
  • 2 Tbsp. whole grain mustard
  • 1 tsp cracked black peppercorns
  • 1/2 tsp salt
  • 4 tsp Emeril's Essence see * Note Canadian Cowboy Baked Beans (see recipe)

Directions

  1. Place the rib-eyes in a large sealable bag.
  2. In a bowl, combine the remaining ingredients except the Essence. Pour into the bag with the steaks and seal the bag. Place in the refrigerator to marinate for 2 to 4 hrs, turning the bag occasionally to coat the meat proportionately.
  3. Preheat a grill.
  4. Remove the steaks from the bag and pat dry. Throw away the marinade. Season each steak with 1 tsp. of Essence and grill till medium-rare, about 3 to 4 min per side. Remove from the grill and immediately serve with the Canadian Cowboy Baked Beans.
  5. This recipe yields 4 servings.
