Ingredients
- 1/4 c. minced romaine lettuce
- 2 Tbsp. crumbled feta cheese
- 2 Tbsp. minced black olives
- 1 Tbsp. minced jarred roasted red peppers
- 2 tsp Good Fat Dressing (see separate recipe)
- 1 whl -wheat pita pocket, cut in half
Directions
- Vary this tasty pita by using other types of cheese, soy or possibly dairy. If you like, serve the filling on its own as a salad. You could also fold in some canned chickpeas for a heartier meal.
- In small bowl, combine lettuce, cheese, olives, peppers and dressing and mix well. Spoon into pita halves. Wrap tightly in plastic wrap.
