Greek Style Pita Pocket Recipe

Ingredients

  • 1/4 c. minced romaine lettuce
  • 2 Tbsp. crumbled feta cheese
  • 2 Tbsp. minced black olives
  • 1 Tbsp. minced jarred roasted red peppers
  • 2 tsp Good Fat Dressing (see separate recipe)
  • 1 whl -wheat pita pocket, cut in half

Directions

  1. Vary this tasty pita by using other types of cheese, soy or possibly dairy. If you like, serve the filling on its own as a salad. You could also fold in some canned chickpeas for a heartier meal.
  2. In small bowl, combine lettuce, cheese, olives, peppers and dressing and mix well. Spoon into pita halves. Wrap tightly in plastic wrap.
