Ingredients
- 2 1/4 c. flour
- 1 1/2 tsp baking pwdr
- 1 1/2 tsp baking soda
- 1 1/2 tsp grnd cinnamon
- 1/2 tsp salt
- 1/2 c. packed light brown sugar
- 2 x Large eggs
- 1 c. lowfat milk
- 1/2 c. molasses
- 1/2 c. salad oil
Directions
- Stir flour with ginger, baking pwdr, soda, cinnamon and salt. Blend in brown sugar. Beat Large eggs slightly; combine with remaining ingredients. Add in to dry ingredients; mix thoroughly. Pour into greased and floured 10 inch tube pan.
- Bake at 350 F. 45 to 50 min or possibly till cake tests done when tested with wooden pick. Serve hot with Orange-Glazed Pears.
- Orange-Glazed Pears:Core and slice 2 fresh winter pears. Combine 1 can (6 ounce.) fresh orange juice concentrate, 1/4 c. sugar and 1 Tbsp. sherry. Add in pears; simmer till tender and glazed. Arrange pear slices around and on top Ginger Cake. Spoon remaining glaze over cake.
