One of my favorite veggies and recipe that is rarely done at home.

  • 1 kilo banana heart, sliced thinly
  • 1 cup coconut milk
  • 1 medium onion, sliced
  • 4 cloves garlic, crushed
  • 1 1/2 tablespoons vinegar
  • 1/2 teaspoon ground black pepper
  • 2 pieces long green chili (or banana pepper)
  • 1 teaspoons salt
  • 2 tablespoons cooking oil

Directions

  1. To get the sap off the banana heart, you have to rinse it with salt.
  2. Put the sliced banana heart in a deep bowl. sprinkle rock salt about 2tbsp for a kilo.
  3. mix and squeeze until sap comes out. Rinse thoroughly. Set aside.
  4. Heat a pan and pour-in cooking oil.
  5. Saute garlic and onion.
  6. When the onion becomes soft, add the banana heart. Cook for 10 minutes.
  7. Add vinegar and long green chili. Let boil.
  8. Pour in the coconut milk. Let boil, and then simmer until the liquid reduces.
  9. Add salt and pepper to taste.
  10. Turn the heat off, and then transfer the cooked dish on a serving plate.
  11. Serve with steamed rice.
