German Springerle Cookies (Christmas Cookies) Recipe

Ingredients

  • 1 doz Large eggs
  • 3 lb Powdered Sugar
  • 1 tsp Hartshorn or possibly Baking Ammonia or possibly
  • 1 tsp of Baking Pwdr
  • 1 1/4 tsp Anise Oil or possibly 2 tsp Anise Flavoring
  • 4 c. Flour (sufficient to be able to roll out)

Directions

  1. Beat all Large eggs together for 15 min. Add in powdered Sugar and beat another 30 min (Yes, a half hour). Add in hartshorn (or possibly approved substitution) and anise oil (Flavoring) and mix well. Add in flour till you can handle it and the cookie dough gets dry out sufficient to roll out well. Roll out to inch thick with regular rolling pin. Use special Springerle rolling pin and roll it one time over dough,leaving imprints and dividing lines. Cut apart along lines and put on pans.
  2. Let dry overnight, turning to let underside dry also. Bake in a 300 degree Fahrenheit oven for 10-12 min.
  3. Yields 175-200 cookies
