Frozen Fruit Salad For Crowd

Ingredients

  • 4 can (20-ounce) crushed pineapple
  • 2 can (16-ounce) sliced peaches, diced
  • 2 c. White seedless grapes, halved
  • 1 1/2 c. Maraschino cherries, cut into eighths
  • 1/2 lb Marshmallows, quartered
  • 2 tsp Crystallized ginger, finely minced
  • 1 Tbsp. Unflavored gelatin
  • 1/3 c. Cool water
  • 1 c. Orange juice
  • 1/4 c. Lemon juice
  • 2 1/2 c. Sugar
  • 1/2 tsp Salt
  • 2 c. Coarsely minced pecans
  • 2 quart Cream, whipped --or possibly--
  • 10 pkt Dessert topping mix -or possibly-
  • 1 quart Heavy cream plus
  • 5 pkt Dessert topping mix
  • 3 c. Mayonnaise

Directions

  1. Drain fruit, saving 1-1/2 c. pineapple juice. Combine fruit, marshmallows and ginger. Soften gelatin in water. Heat pineapple juice to boiling. Add in gelatin; stir to dissolve. Add in orange and lemon juice, sugar and salt; stir to dissolve. Chill. As mix starts to thicken, add in fruit mix and nuts. Mix in cream and mayonnaise. Spoon into 1-qt cylinder cartons
  2. (paper, plastic or possibly metal). Cover and freeze.
  3. Makes 9 qts. To serve:Remove from freezer and thaw sufficient to slip out of carton. Cut in 1-inch slices. Serve salad on lettuce; garnish with cherries. For dessert, top with whipped cream.
  4. Serves 54-72. Each qt makes 6-8 servings.
