%20in%20an%20office%20building%20in%20Clayton,%20MO.%20It%20was%20sort%20of%20a%20mini%20downtown%20area%20but%20more%20upscale%20and%20I%20loved%20working%20there.%20My%20friends%20and%20I%20would%20walk%20somewhere%20close%20most%20days%20to%20grab%20lunch%20and%20not%20a%20week%20went%20by%20that%20one%20of%20those%20trips%20wasn%E2%80%99t%20to%20the%20Famous%20&%20Barr%20store%20for%20this%20soup.%20How%20long%20ago;%20hmm,%20think%20lunch%20was%20about%20$1.25%20%E2%80%93%20that%20long%20ago!%3C/p%3E%3Cp%3EThe%20soup%20was%20thick%20and%20rich,%20and%20came%20from%20the%20kitchen%20in%20a%20McCoy%20pottery%20brown%20drip%20soup%20bowl%20bubbling%20with%20melted%20cheese%20atop%20two%20slices%20of%20French%20baguette.%20As%20the%20stores%20closed%20their%20restaurants,%20it%20was%20fortunate%20that%20many%20years%20ago%20the%20St.%20Louis%20Post-Dispatch%20published%20the%20recipe%20in%20their%20Food%20Section%20so%20fanatics%20of%20this%20soup%20could%20recreate%20their%20obsession%20at%20home!%3C/p%3E%3Cp%3EFamous%20Barr%20may%20be%20no%20more,%20but%20I%E2%80%99m%20grateful%20this%20recipe%20still%20exists.%20Although%20it%20is%20certainly%20edible%20the%20day%20it%20is%20made,%20it%20is%20well%20worth%20planning%20and%20letting%20it%20sit%20overnight%20so%20the%20flavors%20have%20time%20to%20meld%20together.%20I%E2%80%99m%20certain%20it%E2%80%99s%20one%20of%20the%20reasons%20this%20particular%20French%20onion%20soup%20is%20so%20stellar%20and%20remains%20coveted%20by%20residents%20near%E2%80%A6and%20far!%3C/p%3E%3Cp%3ESome%20of%20my%20readers%20might%20recall%20my%20mentioning%20that%20I%20received%20a%20box%20of%20items%20my%20cousin%20sent%20me%20last%20year%20that%20were%20from%20my%20Aunt%20Pat%20and%20Uncle%20Eddie%E2%80%99s%20estate.%20This%20wine%20glass%20is%20one%20of%20them;%20it%20seemed%20fitting%20that%20I%20should%20include%20that%20glass%20from%20them%20in%20an%20article%20about%20an%20iconic%20dish%20from%20they%20city%20they%20spent%20their%20entire%20lives%20in.%3C/p%3E%3Cp%3EFrench%20Onion%20Soup%3C/p%3E%3Cp%3EA%20truly%20iconic%20soup%20from%20St.%20Louis%20and%20the%20old%20Famous%20and%20Barr%20retail%20store.%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EParmesan%3C/p%3E%3Cp%3EPreparation%3C/p%3E%3Cp%3ETo%20Prepare%20the%20Soup:%3C/p%3E%3Cp%3ESlice%20the%20onions%201/8%22%20thick.%20Melt%20butter%20in%20a%20large%20pot%20and%20saut%C3%A9%20the%20onions%20over%20low%20heat%20for%201%201/2%20-%202%20hours.%3C/p%3E%3Cp%3EAdd%20seasonings;%20pepper,%20paprika%20and%20bay%20leaves.%20Mix%20well%20and%20saute%20on%20low%20for%202-3%20minutes;%20stirring%20frequently.%3C/p%3E%3Cp%3EAdd%202/3%20of%20the%20broth%20to%20the%20pot%20and%20stir%20well.%20And%20the%20flour%20to%20the%20remaining%20broth%20and%20mix%20thoroughly%20and%20then%20add%20to%20the%20pot,%20stirring%20in.%20Add%20wine%20and%20simmer%202%20hours.%3C/p%3E%3Cp%3ERefrigerate%20overnight.%3C/p%3E%3Cp%3ETo%20Serve:%3C/p%3E%3Cp%3ETurn%20on%20oven%20to%20broil.%3C/p%3E%3Cp%3EBrush%20bread%20slices%20with%20olive%20oil%20and%20sprinkle%20with%20Parmesan%20cheese.%20Lightly%20brown%20bread%20using%20the%20broiler%20watching%20very%20carefully%20so%20not%20to%20burn.%3C/p%3E%3Cp%3EHeat%20soup%20on%20stove%20top.%3C/p%3E%3Cp%3ELayer%20soup,%20then%20Parmesan%20toasted%20bread,%20then%20cheese%20in%20ovenproof%20bowls.%3C/p%3E%3Cp%3EBroil%20until%20cheese%20melts;%203-5%20minutes.%20Watch%20carefully!%3C/p%3E%3Cp%3ELet%20cool%20for%20a%20couple%20of%20minutes%20before%20eating.%3C/p%3E%3Cp%3E2.0%3C/p%3E%3Cp%3Ehttp://www.creative-culinary.com/2012/03/french-onion-soup-from-famous-barr-st-louis-missouri/%3C/p%3E%3Cp%3EThis%20recipe%20brought%20to%20you%20by%20%C2%A9%20Creative%20Culinary%20%7C%20A%20Food%20and%20Cocktail%20Blog%20%7C%20Website:%20www.creative-culinary.com%3C/p%3E%3Cp%3EFrom%20the%20St.%20Louis%20Post%20Dispatch%3C/p%3E){kind=link}
