Directions

  1. Lean fish contain less than 2-1/2 percent and the flesh is mild and lightly colored. These are the mildest tasting fish.
  2. Moderate-fat fish usually have less than 5 - 10 percent fat. Fish in this category are firmer and more darkly colored than lean fish.
  3. High-fat fish are those with more than 10 percent fat content. The more even distribution of fat in high-fat fish gives their flesh a darker color, firmer texture, and more distinctive color and flavor. These fish contain the most omega-3 fats.
