Ingredients

  • 6 lg. green peppers, bell
  • 1/2 c. minced onion
  • 1/2 c. minced celery
  • 1 lg. lean grnd beef
  • 1 tbsp. diet butter
  • 1 (4 ounce.) can ends and pcs mushrooms, liquid removed
  • 6 slices very tin sliced bread, the kind with 70 calories for two slices
  • 1 teaspoon salt to taste
  • 1/2 teaspoon pepper, optional
  • 1 (12 ounce.) can tomato-vegetable juice

Directions

  1. Parboil bell pepper for 2-3 min. Drain. Saute/fry onions, celery and grnd beef till vegetables are tender and meat is no longer pink. Add in mushrooms, cubed bread, seasoning and vegetable juice. You can use 3/4 of the juice if you do not want it too moist. An egg may also be added if you like.
  2. Stuff peppers, place in shallow pan. Pour 1/2 c. water around peppers. Bake at 350 degrees for 20-30 min. About 229 calories each.
