Crudites With Aioli Recipe

Ingredients

  • cherry tomatoes cauliflower florets broccoli florets carrot sticks, etc.
  • 6 med clv garlic, peeled
  • 1 c. extra-virgin extra virgin olive oil
  • 1 lrg egg
  • 1 tsp fresh lemon juice
  • 1 pch salt

Directions

  1. In a small skillet over low heat, cook the garlic cloves with 1 tsp. of the oil till the garlic is golden brown on all sides. Remove from heat and cold.
  2. Place the egg, lemon juice, salt and 1 Tbsp. of the oil in a blender or possibly food processor. Process till blended. With the motor running, drop the garlic cloves into the machine, then add in the balance of the oil in a thin steady stream. Continue processing till thickened. Spoon into a small bowl. Cover and chill for 2 hrs before serving.
