Creamy vegetable and halloumi pie Recipe

I’m so proud of this creamy vegetable and halloumi pie! It took me a few attempts to get it just right (we ate a lot of pie that week…), but I’m so happy with how it turned out. Crispy pastry, a luxuriously creamy sauce, plenty of colourful veggies, and soft chunks of salty halloumi cheese – it’s honestly my ultimate dinner. Just the kind of thing to indulge in at this time of As you will know if you’ve been reading this blog for a while, pastry isn’t exactly my strong suit – I’m very much in the ‘make things look rustic to cover up your lack of skill’ camp. So my halloumi pie is definitely not perfectly constructed. But it stands tall, it’s crispy all over, and my little leafy pattern on top doesn’t look too terrible (apart from that…
