Directions

  1. Heat butter or margarine in a pan until melted. Be careful to not overcook it.
  2. Warm the bowl of a blender or food processor by filling with hot tap water and then draining and drying it.
  3. Add the egg yolks, lemon juice, salt, and cayenne pepper into a blender and mix until the combination turns light yellow (approximately thirty seconds).
  4. Begin adding hot butter slowly.
  5. Keep on dribbling butter, increasing the pace slowly. The fusion will soon get much thicker.
  6. With a spatula, work the sides of the blender bowl and mix for 5 seconds longer; then cover.
  7. Make sure the sauce stays warm by immersing the covered bowl in tepid water.
