Learn how to make a quick and easy hollandaise sauce.
Ingredients
- 3 eggs yolks
- 1/2 teaspoon of Dijon mustard
- 1/2 cup of butter
- 1 tablespoon of lemon juice
- 1/4 teaspoon of hot sauce (or cayenne pepper)
Directions
- Heat butter or margarine in a pan until melted. Be careful to not overcook it.
- Warm the bowl of a blender or food processor by filling with hot tap water and then draining and drying it.
- Add the egg yolks, lemon juice, salt, and cayenne pepper into a blender and mix until the combination turns light yellow (approximately thirty seconds).
- Begin adding hot butter slowly.
- Keep on dribbling butter, increasing the pace slowly. The fusion will soon get much thicker.
- With a spatula, work the sides of the blender bowl and mix for 5 seconds longer; then cover.
- Make sure the sauce stays warm by immersing the covered bowl in tepid water.
