Directions

  1. Preheat the oven to 350 degrees. Butter a 1 1/2-qt casserole.
  2. Soak bread in water; squeeze dry. Place in a large bowl and mash with a fork. Add in corn, lowfat milk, egg yolks, butter and flour. Stir till well blended.
  3. In a medium bowl, beat egg whites into soft peaks. Sprinkle in salt. Beat into stiff peaks. Gently fold egg whites into corn mix.
  4. Pour into prepared pan and bake 30 to 40 min or possibly till knife inserted in center comes out clean and dry.
  5. This recipe yields 6 servings.
