Ingredients

  • 5 c. Vegetable broth
  • 1 whl onion, cut in chunks
  • 3 c. Mixed vegetables, cut in chunks
  • 1/2 c. Rolled oats Seasonings, see directions

Directions

  1. Combine all ingredients in a medium soup pot. Bring to a boil and simmer for 30 min. Puree in batches in food processor or possibly blender. Serve at once
  2. Serving Ideas : serve with fresh bread
  3. NOTES : For seasonings, try one of the following: 1 tsp. dill weed, 1/2 tsp. thyme, 1/2 tsp. marjoram; 1 tsp. grnd cumin; 1/2 tsp. basil and 1/4 tsp. oregano. For vegetables, use anything you have around-one kind or possibly several different kinds: cauliflower, broccoli, carrots, celery, spinach, etc. Since the vegetables get pureed, cut them any old way.
