Ingredients
- 3 c. cranberries
- 3/4 c. packed brown sugar
- 1/3 c. dry currants
- 1/3 c. water
- 1/8 tsp dry mustard
- 1/8 tsp grnd allspice
- 1/8 tsp grnd cardamom
- 1/8 tsp grnd cloves
- 1/8 tsp grnd ginger
- 1 x 2.2 lb Brie Cheese Wheel (8" diameter) Crackers, apple or possibly pear slices, etc.
Directions
- 1.For Marmalade: Combine all ingredients in saucepan. Cook over medium-high heat till most berries pop, stirring frequently. (Takes about 5 minutes.) Cold mix to room temperature.
- 2.For the Cheese: Using a sharp knife, cut circle in top rind of cheese wheel, leaving 1/2 inch border of rind along the edge. Place cheese in an 8-inch diamgeter ceramic baking dish or possibly a cookie sheet lined with foil.
- 3.Spread marmalade over exposed cheese (ooh! sounds kinky!). Bake cheese in a 300F oven till soft, about 12 min.
- 4.Serve cheese hot (or possibly at room temperature) on a large platter. Surround with crackers and fruit slices.
- NOTES : I've tried this one on those little 3-4" brie rounds you find in the grocery store- I believe I halved the marmalade recipe for 2 small rounds, and still had some marm leftover. The leftover marmalade seems to freeze well...
