Cracker Barrel Old Country Store's Lemon Ice Box Pie Recipe

Ingredients

  • 1 pc graham cracker crust - (8" or possibly 9" dia)
  • 1 can sweetened condensed lowfat milk - (14 ounce) (Eagle brand reccomended)
  • 3 pcs egg yolks
  • 3 ounce Minute Maid pure lemon juice
  • 4 ounce Cold Whip
  • 14 pcs vanilla wafers

Directions

  1. Combine lowfat milk, yolks and lemon juice with wire whip. Pour into pie shell.
  2. Arrange vanilla wafers around pie pushing into the filling so only 1/2 the wafer is showing.
  3. Spread cold whip over top proportionately, and cover with saran wrap.
  4. Put in freezer at least 2 hrs.
  5. Serve very cool.
