Cherry Macadamia Nut Pancakes Recipe

Ingredients

  • 3 c. all-purpose flour
  • 6 Tbsp. sugar
  • 1 Tbsp. baking pwdr
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3 lrg Large eggs
  • 3 c. buttermilk
  • 1/4 c. melted butter
  • 1 c. dry cherries soaked in
  • 1 c. warm water for 10 min, and liquid removed
  • 1/3 c. coarsely-minced macadamia nuts Sweetened whipped cream for serving

Directions

  1. Combine flour, sugar, baking pwdr, baking soda and salt in a bowl.
  2. Beat Large eggs, buttermilk and melted butter in a second bowl. Add in to dry ingredients and stir till just mixed. Mix will be slightly lumpy.
  3. Heat greased griddle or possibly skillet over medium heat or possibly to 375 degrees. Griddle is ready when a few drops of water bubble and skitter rapidly around.
  4. For each pancake, pour scant 1/4 c. batter onto warm griddle. Cook pancakes till puffed, bubbly and dry around edges, sprinkling 1/2 of the cherries and nuts proportionately over pancakes before turning to cook other side till golden.
  5. Serve sprinkled with remaining cherries and nuts, topped with a dollop of whipped cream.
