  • 1 chayote squash, peeled & diced
  • ½ cup white onion, sliced thin
  • ½ small serrano pepper, minced
  • 1 cup (3 leaves) bok choy
  • ½ cup black beans, rinsed
  • ½ cup cooked rice
  • ¼ teaspoon cumin
  • ¼ teaspoon coriander
  • ½ teaspoon Penzey's Arizona Dreaming (or chili powder)
