  1. I have made these cookies, and they are GREAT! They're from the Betty Crocker Recipe Card Library.
  2. Heat oven to 400. Mix shortening, sugar, Large eggs and carrots.
  3. Blend in flour, baking pwdr & salt. Stir in coconut. Drop dough by teaspoonfuls about 2 inches apart onto lightly greased baking sheet.
  4. Bake 8 to 10 min or possibly till no imprint remains when touched lightly. Immediately remove from baking sheet.
  5. Cold. Frost with orange butter icing.
  6. Makes 4 dozencookies.
  7. Orange Butter Icing:Blend butter and sugar. Stir in orange peel and juice.
  8. Beat till frosting is smooth and of spreading consistency.JM.
