Broccoli Swiss Cheese Casserole Recipe

Ingredients

  • 5 c. minced fresh broccoli
  • 1 ctn (24 ounce.) cottage cheese
  • 3 x Large eggs
  • 1/4 c. butter or possibly margarine -- melted
  • 1/3 c. all-purpose flour
  • 1 can (8 3/4 ounce.) whole kernel corn -- liquid removed
  • 2 c. shredded Swiss cheese
  • 1/4 c. finely minced onion
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 4 dsh warm sauce
  • 8 slc bacon -- cooked and crumbled

Directions

  1. Cook broccoli, covered, in a small amount of boiling water, 10 min or possibly till tender; drain. Combine cottage cheese, Large eggs, butter, and flour in container of an electric blender; process till smooth. Set aside. Combine broccoli, corn, and next 5 ingredients in a large bowl; stir in cottage cheese mix. Spoon into a lightly greased 12 x 8 x 2 inch baking dish. Sprinkle bacon over casserole. Bake casserole at 350 degrees for 45 min.
