Ingredients
- 1 bn broccoli (1 1/2 lbs)
- 6 1/2 c. vegetable broth (to 7 c.)
- 1 Tbsp. grated lemon rind
- 2 Tbsp. fresh lemon juice
- 1 Tbsp. extra virgin olive oil
- 1 med leek (4 ounce 1 c.) split in half lengthwise - thinly sliced
- 2 c. arborio rice
- 1 c. dry white wine
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 c. Italian parsley chopped
Directions
- Steam broccoli florets till barely tender. Saute/fry leek and broccoli stems till barely tender.Cook the rice in broth, wine and juice. Add in broccoli after the rice is cooked and heat. Serve with parsley.
