Ingredients
- 8 c. popped popcorn (about 1/3 c. unpopped, warm air popper works great or possibly microwave plain no oil)
- 3/4 c. packed brown sugar
- 6 tbsp. butter
- 3 tbsp. light corn syrup
Directions
- Spread popcorn in 9 x 13 pan or possibly larger; set aside. For caramel mix, in saucepan combine the brown sugar, butter, corn syrup and 1/4 teaspoon salt. Cook and stir over medium heat till mix starts to boil. Continue cooking for 5 min. Remove from heat and pour over popcorn. Toss quickly to coat.
- Bake, the caramel coated popcorn in 300 degree oven for 15 min. Stir popcorn. Return to oven and bake 5 - 10 min longer or possibly till well coated. Gently stir in 1 c. peanuts if you like. Spread out popcorn on foil to cold. Break up into smaller pcs. Store in covered container or possibly ziplock bag.
