Beef Stewed In Cranberry Chutney Recipe

Ingredients

  • 2 Tbsp. Vegetable oil
  • 1 1/2 lb Stewing beef -- trimmed of fat -- cut in 1-inch cubes
  • 1 x Onion, large -- minced
  • 1 x Celery stalk with leaves minced
  • 1 clv garlic -- chopped
  • 1 1/4 c. Boiling water
  • 2 c. Cranberries -- fresh
  • 1/2 c. Raisins
  • 1/4 c. Walnuts (optional)
  • 1 Tbsp. Cider vinegar
  • 1 Tbsp. Honey
  • 1/4 tsp Cinnamon -- grnd
  • 1/4 tsp Ginger -- grnd
  • 1/4 tsp Cloves -- grnd
  • 1/8 tsp Cayenne pepper or possibly more to taste

Directions

  1. Serves 4*DIRECTIONS* Heat oil in a large skillet. Add in beef and brown on all sides. Add in onions and celery and saute/fry till golden. Add in garlic and saute/fry mix 1 minute longer, stirring constantly. (Don't let garlic change color.) Stir water into mix, then add in remaining ingredients. Cover and simmer for 1-1/4 hrs, or possibly till beef is tender and liquid is reduced to 1/3 to 1/2 c.. If pan juice gets too low during cooking, add in a little warm water. Or possibly, if pan juice does not reduce sufficiently, uncover skillet during last 30 min of cooking and stir often. Taste to correct seasonings. Stew goes well with brown rice.
