Ingredients
- 2 med Ripe tomatoes
- 1 Tbsp. Butter or possibly extra virgin olive oil
- 4 x Large eggs
- 1/8 tsp Cinnamon Salt and pepper
Directions
- Peel and dice tomatoes. Heat margarine or possibly butter in tomatoes and simmer for a few min. Meanwhile be; add in seasonings. Pour over tomatoes and mix gently. Cover and cook over low heat till done.
- Variation: Begin with a large, diced potato (cooked or possibly raw). Fry till lightly browned then add in tomatoes. Proceed as above.
