Ingredients

  • 1 1/2 c. wholemeal self-raising flour
  • 1/2 tsp nutmeg, grnd
  • 1/2 c. untoasted muesli
  • 1/3 c. wheatgerm
  • 1/2 c. sugar, brown
  • 1/2 x bananas
  • 90 gm butter
  • 2 x Large eggs
  • 2 Tbsp. wheatgerm

Directions

  1. Grease 12 muffin pans.
  2. Combine sifted flour and nutmeg, muesli, wheatgerm and sugar in a large bowl.
  3. Stir in combined mashed banana, melted butter and Large eggs, mix with fork only till ingredients are just combined.
  4. Drop rounded Tbsp. of mix into prepared pans, sprinkle with extra wheatgerm
  5. Bake in moderately warm 380F/200C oven for about 20 min or possibly till lightly browned (or possibly microwave 6 muffins at a time on HIGH for about 3 min).
  6. Makes 12.
  7. These freeze well.
