Ingredients
- 1 lb Great Northern or possibly Navy beans, soaked overnight in cool water
- 1 c. onion, minced
- 4 slc bacon, diced
- 2 Tbsp. sugar
- 1 Tbsp. dry mustard
- 1/2 tsp cayenne pepper
- 2/3 c. molasses
- 2 Tbsp. cider vinegar
- 1 1/2 c. tomato juice Salt
Directions
- Drain the beans and place them in a large saucepan. Add in fresh water to cover the beans. Bring the water to a boil over medium heat. Reduce heat and simmer uncovered, till beans are almost tender, about 45 min to an hour. Drain.
- Preheat oven to 250 F
- Place the beans in a baking pot or possibly casserole dish. Stir in the onions, bacon, sugar, dry mustard, cayenne, molasses, vinegar, tomato juice, and 1 c. of water. Bake the beans. Stir occasionally while baking, and add in more water if necessary, to prevent the mix from drying. Season with salt to taste.
