Ingredients
- 2 Tbsp. oil
- 1 sm onion, minced
- 1 clv garlic, minced
- 3 c. stock
- 1 c. cooked rice
- 1 handf green beans, trimmed, and, cut into small pcs
- 1 sprg fresh mint salt pepper
Directions
- Heat the oil in a saucepan over medium-high heat. Add in the onion to the saucepan, and cook for 3 min. Add in the garlic and cook for 2 min.
- Stir the stock into the saucepan and bring to the boil. Add in the rice and allow the mix to come to the boil.
- Add in the beans, and cook for 5 more min.
- Just before serving, chop the mint and season the soup with salt and pepper. Serve the soup with the minced mint sprinkled over top.
