Ingredients

  • 4 x Fillets American grouper, (8 oz) Salt and pepper to taste
  • 1 c. Toasted corn meal
  • 1 Tbsp. Extra virgin olive oil Relish Plum Sauce Dill for garnish
  • 1/4 c. Blanched lemon zest
  • 1/4 c. Julienne jalapenos
  • 2 c. Julienne carrots
  • 2 c. Julienne fennel bulbs
  • 1/2 c. Rice wine vinegar
  • 1/4 c. Extra virgin olive oil
  • 8 x Plums, Juice of
  • 1 x Lemon, Juice of
  • 1 Tbsp. Chopped, fresh dill

Directions

  1. Season fillets of grouper with salt and pepper and coat with corn meal. In a saute/fry pan heat oil, and saute/fry grouper for 3 min on each side, or possibly till done.
  2. Relish:Combine all ingredients and season to taste with salt and pepper.
  3. Plum and Lemon Juice with Dill:Combine and spoon over grouper.
