Ingredients: 2 c. dungeness crab meat - (10 to 12 ounce) thawed if necessary; 1 c. soft bread crumbs; 1/4 c. chopped green onion; 1/4 c. chopped celery; 3 Tbsp. mayonnaise; 1 x egg beaten; 1 dsh bottled warm pepper sauce - (generous); Salt to taste; Freshly-grnd black pepper to taste; Flour as needed; 3 Tbsp. vegetable oil

Ingredients

2 c. dungeness crab meat - (10 to 12 ounce) thawed if necessary
1 c. soft bread crumbs
1/4 c. chopped green onion
1/4 c. chopped celery
3 Tbsp. mayonnaise
1 x egg beaten
1 dsh bottled warm pepper sauce - (generous)
Salt to taste
Freshly-grnd black pepper to taste
Flour as needed
3 Tbsp. vegetable oil

Directions

Combine all ingredients except flour and oil; mix well. Chill.
Shape into 4 cakes, about 3/4-inch thick. Dust with flour. Saute/fry crab cakes in warm oil on both sides about 10 min or possibly till golden.
This recipe yields 4 crab cakes.
Comments: For warm crab sandwiches, serve on toasted English muffins. Delicious served with chili sauce.
