Is a pickled green papaya fruit that has a sweet-sour taste. Very nice to eat with fried fish, or grilled meat. My version of achara is very finely grated compared to the commercial ones. The sweet-sour tang is much tasty too!

Directions

  1. Mix grated papaya, carrot and sweet red bell pepper in a deep glass bowl. Set aside.
  2. Boil the vinegar, sugar, salt in a cooking pan for 2 – 4 minutes. Adjust the sourness and sweetness to your preferred acidity.
  3. Pour the vinegar mixture over the grated papaya, let it cool and then refrigerate.
