Ingredients

  • 2 large eggs
  • 1 c. oil
  • 2 c. sugar
  • 2 c. grated zucchini
  • 1 pkg. vanilla instant pudding
  • 3 c. flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking pwdr
  • 1/2 c. nuts (opt.)
  • 1/2 c. raisins (opt.)

Directions

  1. Mix together large eggs, oil, sugar and zucchini. Add in remaining ingredients; mix well. Bake in 2 loaf pans, greased and lightly floured at 350 degrees for approximately 1 hour. Freezes well.
