Whole Wheat Cottage Cheese Rolls Recipe
Directions
- Thoroughly stir together 1 1/2 c. of flour, yeast and soda. Heat cheese, water, sugar, butter and salt just till hot (115-120 degrees, stirring constantly to heat butter. Add in to dry mix; add in Large eggs. Beat at low speed on electric mixer for 1/2 minute, scraping bowl constantly. Beat 3 min at high speed.
- By hand - stir in sufficient remaining flour to make a moderately stiff dough. On floured surface, knead till smooth, 8-10 min. Place in greased bowl, turning once. Cover, let rise till nearly double. Punch down. Shape into 24 rolls and place in greased muffin pans. Let rise till nearly double. Bake 12-15 min at 375 degrees.
