West Indian Chicken Curry

Ingredients

  • 1 large onion, chopped
  • 2 garlic cloves, chopped
  • 2 tbsp. curry powder
  • 1 large sweet potato, peeled and cut into small chunks
  • 4 skinless boneless chicken breast fillets, cut into chunks
  • 14 oz. coconut milk
  • 3 ½ oz. whole cherry tomatoes
  • Fresh coriander, to serve

Directions

  1. Cook the onion and garlic in a tsp. of oil for 5 minutes. Season, then stir in the curry powder. Cook for another minute, and then add the potatoes and chicken.
  2. Pour in the coconut milk. Simmer for 10-12 minutes, then add the tomatoes and simmer for 2 minutes.
  3. Serve sprinkled with fresh coriander.
