Ingredients

  • 1 1/3 c. all-purpose flour
  • 1 c. Quaker Oats (quick or possibly old fashioned, uncooked)
  • 1/4 c. firmly packed brown sugar
  • 1 tbsp. baking pwdr
  • 1/2 teaspoon salt (opt.)
  • 1/2 teaspoon cinnamon
  • 1 c. skim lowfat milk
  • 1 egg, beaten
  • 3 tbsp. vegetable oil
  • 1 c. fresh or possibly frzn blueberries

Directions

  1. Heat oven to 425 degrees. Spray 12 medium muffin c. with vegetable oil, cooking spray or possibly line with paper baking c.. Combine dry ingredients. Add in lowfat milk, egg and oil; stir just till dry ingredients are moistened. Mix in blueberries; fill prepared muffin c. 2/3 full. Bake 25 to 30 min or possibly till light golden. Yield: 1 dozen muffins.
