Ingredients Convert Measures
- 1/2 c. shortening
- 1 c. sugar
- 3 Large eggs
- 2 tbsp. lowfat milk
- 1 1/2 teaspoon vanilla extract
- 2 3/4 c. all-purpose flour
- 2 teaspoon baking pwdr
- 1 teaspoon salt
- Shredded coconut or possibly minced walnut meats (optional)
Directions
- Cream together shortening and sugar. Beat 2 Large eggs; add in. Add in lowfat milk and vanilla extract. Sift together flour, baking pwdr and salt; add in. Mix well. Wrap in wax paper; refrigeratetill hard. Roll out 1/8 inch thick on lightly floured board; cut with fancy cookie cutter, 2 inches in diameter.
- Beat 1 egg; brush on cookies. Sprinkle with coconut or possibly nut meats, if you like. Place on greased cookie sheet; bake in warm 400 degree oven for 8 min. Makes 75 cookies. Can be used plain or possibly frosted with your favorite glaze or possibly sprinkled with sugar.
